
This summer is starting off with high temperatures that have us positively parched! We love this refreshing Kiwi Mojito by Amee's Savory Dish, for cooling down after blazing hot summer days. You can also make this delicious drink without alcohol and enjoy mocktails with the whole family!
Ingredients

4 mint leaves muddled

1 lime quartered

2 tbsp raw sugar for the rim

2 kiwis peeled and sliced

1 tbsp agave nectar

2 oz white rum
-
ice

4 oz club soda

*optional garnishes extra sliced kiwi, lime, and extra sprigs of fresh mint
Instructions

Rinse and pat mint leaves dry. Muddle the mint leaves to release the oils using a mortar and pestle, or you can do it directly in the cocktail shaker with the back of a wooden spoon. Just gently press down on the leaves (you don't want mint mush).

In a mini food processor, puree the two peeled and chopped kiwis and agave nectar.

Next, use one of the lime slices to run along the rim of two glasses. Pour the raw sugar in a shallow bowl and dip the rim of the glasses to coat with the sugar and fill with ice.

Pour the kiwi mixture, 2 oz light rum, 1 oz fresh lime juice (2-3 of the quarters squeezed, depending on the size of the lime), and muddled mint in a cocktail shaker. Shake vigorously and pour into the two prepared low ball glasses.

Top each glass with 2 oz of club soda and stir to mix. Garnish with extra kiwi, lime, and mint leaves.
